Baked salmon filets are cooked to crispy perfection and then topped with creamy dill sauce and Greek salsa. This dish is full of fresh, herby Mediterranean flavor and is ready in less than 30 minutes.
Preheat the oven to 400 degrees F. Grease or line a baking dish with parchment paper.
In a small bowl, mix together the spices for the salmon, oregano, salt, pepper, garlic powder, cumin, thyme and paprika.
Brush the salmon filets with olive oil then sprinkle the seasoning blend over each piece, making sure to coat them well.
Place the salmon in the baking dish and cover to marinate while you prepare the dill sauce and Greek salsa.
For the Greek salsa, combine the cucumber, cherry tomatoes, red onion and parsley. In a separate bowl or jar, mix together the dressing with olive oil, red wine vinegar, honey, dijon mustard, lemon juice, oregano, salt and pepper. Mix it well then pour the dressing over the vegetables.
Sprinkle with feta cheese and gently stir to bring the salsa together. Set aside in the fridge.
Now place the marinated salmon into the oven and bake for 10-12 minutes. Switch the setting to broil for the last two minutes. Once the salmon is cooked, let it sit for 5 minutes before adding the sauce and salsa.
To serve, spoon some dill sauce over the salmon then top with a generous amount of Greek salsa. Garnish with extra fresh dill or parsley if desired. Serve the baked salmon with the dill sauce and Greek salsa immediately.
