These easy blueberry crumble bars are packed with a sweet filling made from frozen mixed berries like strawberry, blackberry, and raspberry, all layered over a buttery crust. It’s a kid-approved summer treat that comes together fast.
2 Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper for easy removal.
3 Make the berry filling: In a small saucepan over medium heat, combine the berries, maple syrup, and lemon juice. Cook for 5–8 minutes, stirring and mashing the fruit slightly.
4 Stir in chia seeds and vanilla extract and let it cool and thicken for about 15 minutes.
Make the oat base and crumble:
6 In a bowl, combine the melted butter (or coconut oil), vanilla extract and maple syrup.
7 To the same bowl mix in the oats, flour, and cinnamon. Stir until a soft crumbly mixture forms.
Assemble:
9 Press about 2/3 of the dough into the bottom of the prepared pan to form a crust.
10 Spread the berry filling evenly over the crust. Crumble the remaining dough over the top like a streusel.
Bake Berry Bars:
14 Bake for 25–30 minutes, or until the top is lightly golden and set.
12 Allow it to cool completely in the pan before slicing into small bars. Cut them into small squares or strips for easier handling.
