These blueberry streusel muffins are easy to make, super moist and tender. They only require a few simple ingredients that you probably already have in your kitchen. Once you try this recipe, you'll never want any other blueberry muffin.
Make the Streusel Topping
2 In a small bowl, mix flour, sugar, and cinnamon. Add the melted butter and stir with a fork until crumbs form. Set aside.
Prepare the Muffin Batter
4 Preheat your oven to 400°F . Line a muffin tin with paper liners or grease it well.
5 In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
6 In a separate large bowl, whisk the melted butter and sugar until combined. Add the eggs, milk (if using) and vanilla, mixing well.
7 Pour in the buttermilk or yogurt and stir to combine. Gradually add in the dry ingredients until just mixed. Make sure to not overmix.
8 Toss the blueberries in a little flour (this prevents them from sinking to the bottom of the muffins). Then gently add and fold in the blueberries to the batter.
9 Scoop the batter into muffin cups, filling each about ¾ full.
10 Generously sprinkle the streusel topping generously over each muffin.
11 Bake for 15-20minutes or until a toothpick inserted in the center comes out clean.
12 Let the muffins cool for 5 minutes in the pan, then transfer them to a wire rack.
