Kid-Friendly Lentil Soup with Veggies
10 mins prepServes 5
A warm, hearty and tasty lentil soup with veggies for kids. Flavored with a hint of curry and coconut milk, this lentil soup packs in a variety of vegetables like zucchini, carrots, and tomatoes.
1 Rinse the lentils under cold water and set them aside.
2 In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until they are translucent.
3 Toss in the washed lentils, diced zucchini, sliced carrots, and tomatoes. Sauté for a few minutes until the vegetables start to soften.
4 Sprinkle curry powder, dried thyme, salt and pepper over the vegetables, stirring to coat them evenly. Allow the spices to toast for a minute to enhance their flavors.
5 Add the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Let the soup simmer for about 25-30 minutes or until the lentils are tender. Stir occasionally to prevent sticking. If the liquid evaporates quickly, add more broth if needed. If it's too thin, let it simmer a bit longer to allow the liquid to reduce.
6 Pour in the coconut milk, stirring to combine. Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld.
7 Serve as is with the chunky vegetables or allow the soup to cool then blend into a puree.
