Mashed sweet potatoes with a sage infused brown butter is a simple yet delightful side dish that pairs well with anything. The sweet potatoes are boiled then mashed with a sage infused brown butter, cream and warm spices like cinnamon and nutmeg.
Boil the Sweet Potatoes
0 Peel and cut the sweet potatoes into evenly sized chunks. Place the sweet potato chunks into a large pot of salted water. Boil them for 15-20 minutes or until they are fork tender.
Prepare the Sage Brown Butter
3 In a saucepan over medium heat, melt the unsalted butter. Add the sage leaves. Stir continuously and reduce the heat if the butter starts to brown too quickly.
4 Continue to cook and stir the butter until it turns a beautiful golden brown color and emits a nutty aroma. (Reserve 1-2 tablespoons of the brown butter for topping later)
5 Add the minced garlic, heavy cream, cinnamon and nutmeg. Stir it all together for about 1 minute to slightly warm the cream then immediately remove the saucepan from the heat.
Mash the Sweet Potatoes
7 Once the sweet potatoes are fork-tender, drain them and place them back into the warm pot.
8 Pour the sour cream, warm butter and cream over the sweet potatoes and season with salt. Use a potato masher or an electric mixer to blend all the ingredients together until you achieve a smooth and creamy consistency.
9 Transfer the mashed sweet potatoes to a serving dish and garnish with reserved brown butter, fresh thyme leaves (optional) or a sprinkle of ground cinnamon.
